For music, my top three:
1. XMPlay
2. Winamp
3. Foobar
Especially using ASIO4all WITH them...google that in and get it
For video:
1. Quick Time Player
2. VLC

I use Windows Media Player with music and video, but if wmp doesnt support the video format i use GOM Player, but i dont think GOM Player is necessary anymore when WMP12 supports *.avi movies =D =D

Windows Media Player for music and video on Windows.

iTunes for music and QuickTime with Perian for video on Mac OS X.

I use WMP only.
Low on resources, looks good, works really good also. Not sure about WMP12 though. I've yet to try it.

WMP + K-Lite Codec Pack = Win.

For an ACTUAL music manager, I use Mediamonkey.

For audio I use Zune.
For video and etc audio I use VLC.

Used Gom for video and WinAmp for audio, now i just use iTunes and QTime for it all..

For Music: MediaMonkey and Winamp
For Videos: VLC and sometimes Media Player Classic (but I havent used WMP since installation :D)

Oh crap.. i'm the only one suggesting Winamp since there is no Foobar(music only), but if Video player you want i suggest Media Player Classic(K-Lite Codec)
if you like skinned media player, use WMP

For music I prefer Foobar because it has ASIO and makes your music sound just so much better.
For movies i prefer VLC since it plays everything without downloading codecs
